·500g of Spaghetti
·300g of Bacon/Pancetta Cubes
·2 Large Ripe Avocados
·100g Sapori D’Italia Pachino
·50g Sapori D’Italia Pesto Ligure
·2 Large Eggs
·80g Grated Parmesan Cheese
·30ml Milk (of your choice)
·1 Lemon
·5 Tablespoons of Sapori D’Italia’s Don Turi Extra Virgin Olive Oil
·Salt
·Pepper
1. Put the water on to boil in a saucepan and add salt to taste
2. Once the water has come to boil, add your preferred type of pasta and leave to cook for the required time
3. Slice your bacon into strips and put into a hot pan to leave to cook until crisp (flip over when bacon browns)
4. Peel the avocado and put into blender
5. Add the eggs
6. Add the grated Parmesan cheese and the milk (we used semi-skimmed)
7. Slice half a lemon and squeeze the juices into the blender (this slows down the avocado browning process and gives the sauce a lighter taste)
8. Add the olive oil, salt and pepper to taste and BLEND! The mixture should have a thick, creamy consistency
9. Chop the Pachino into halves and warm them in the same pan as the bacon
10. Mix everything into a large bowl to serve on to a plate and sprinkle ground black pepper on top and extra cheese if desired
